Cucumbers originated in India and have been cultivated since ancient times in two basic types: long, slender, smooth cucumbers, which require a greenhouse or cold frame, and thick, rough-skinned cucumbers grown outdoors. They are available year-round, either fresh or pickled, and are eaten both raw and cooked. In India, cucumber is added to a refreshing yogurt preparation served to temper curry-spiced dishes. In Scandinavia, sour cream is added to cucumber salad, while in France it is garnished with salted whipped cream. Cucumber can be salted and added to soups, sauces—especially those served with poached salmon—and salads.
