Cold Soups are soups served cold or chilled and are especially refreshing during the summer months. One of the best-known examples is Spanish gazpacho (made with tomatoes and vegetables); other examples include French vichyssoise (a chilled leek-and-potato cream soup), Polish chilled beet soup (chłodnik), and chilled cucumber soup. They may be served with herbs, a drizzle of oil, or croutons.
