Rosemary (Rosmarinus officinalis) is a strongly aromatic, evergreen, shrubby herb in the mint family that has traditionally been used in herbal preparations. Its name comes from the Latin for “dew of the sea.”

Native to the Mediterranean region, the plant grows wild in various parts of Europe and the Americas. Its tough, needle-like leaves contain a camphoraceous oil and are commonly used to season meat, particularly lamb, chicken, and fish. They are only rarely added to salads or soups, except in powdered form, although grinding reduces their original quality. Rosemary is available fresh, dried, or finely ground.
