Vanilla extract is a natural extract of vanilla beans and is considered the highest-quality form of vanilla flavoring used in cooking and baking.

Production

Vanilla beans, most commonly from Vanilla planifolia, are macerated in a solution of ethanol and water for several months. During this process, vanillin and hundreds of other aromatic compounds are released from the beans, creating a complex flavor profile. A good-quality extract should contain at least 35 % alcohol and extract from approximately 100 g of beans per liter.

Bean origins

  • Madagascar – the most widely used, with a creamy, sweet profile (Bourbon vanilla)
  • Tahiti – floral and fruity
  • Mexico – spicier, with notes of chocolate

Uses

Vanilla extract is a versatile ingredient in confectionery and baking. It is added to:

  • batters and creams
  • ice creams and mousses
  • sauces and caramel preparations
  • smoothies and hot drinks

Interestingly, a small amount of vanilla extract can also enhance chocolate flavor, which is why it is added to many chocolate recipes.
