Crushed caraway seeds are caraway (Carum carvi) seeds ground into coarse pieces and commonly used in Czech cuisine instead of whole seeds. Compared with whole caraway, they release their aroma more quickly and blend into foods more easily.
They are used particularly:
- in braised cabbage and sauerkraut
- on roast pork and duck
- in potato soup and Czech sauerkraut soup
- on bread and bread rolls
- in spreads made with quark
Crushed caraway seeds can be prepared at home by lightly crushing whole seeds in a mortar or on a board with the flat side of a knife. This breaks open the cells containing essential oil, producing a more intense flavor than whole seeds.
Caraway is used particularly widely in Czech cooking compared with many other European cuisines. It is a characteristic seasoning for vepřo-knedlo-zelo, svíčková, and tripe soup.
Do not confuse it with cumin (Cuminum cyminum), which has a different flavor and is used in Indian and Mexican cuisine.
