The cucumber or salad cucumber (Cucumis sativus) is not a squash, although it belongs to the same plant family. Cucumbers originated in India and have been cultivated since ancient times in two basic types: long, slender, smooth cucumbers, which require a greenhouse or cold frame, and thick, rough-skinned cucumbers grown outdoors. They are available year-round, either fresh or pickled, and are eaten both raw and cooked. In India, cucumber is added to a refreshing yogurt preparation served to temper curry-spiced dishes. In Scandinavia, sour cream is added to cucumber salad, while in France it is garnished with salted whipped cream. Cucumber can be salted and added to soups, sauces—especially those served with poached salmon—and salads. Salting grated cucumber draws out water, which can be drained before adding the dressing.

The unripe, fleshy fruits of salad cucumbers are used not only in salads but also in cooked dishes, usually in combination with other, more strongly flavored vegetables. Greenhouse cucumbers are generally not peeled because their delicate skin looks decorative when sliced. The seeds are removed from field-grown cucumbers before slicing.
