Garden Lettuce (Lactuca sativa) probably originated in the Mediterranean region but is now grown worldwide. Its types include iceberg lettuce, with a firm, compact head and crinkled leaf edges; romaine lettuce, with elongated, coarse leaves; and head lettuce, whose leaves range from very tender to thick.
There is also a compact dwarf variety of romaine lettuce. Although lettuce can be braised or added to soup, it is generally eaten fresh; lettuce hearts are used in a French preparation of peas. Other leaf-lettuce varieties with red, deeply curled leaves have been bred in recent years, such as "Lollo rosso." Lettuce is available year-round, although it is not grown during summer in hot climates.
