An oven (kitchen oven, baking oven) is an enclosed, heated space designed for baking, roasting, grilling, and other forms of cooking food with heat. It is one of the most important kitchen appliances.

Types of oven

Conventional (static) oven

The oven chamber is heated by upper and lower heating elements. Heat circulates by natural convection, so temperatures may differ in different parts of the oven. Bottom heat is suitable for bread and pizza, while top heat is suitable for browning and gratinating.

Fan (convection) oven

A fan circulates hot air evenly throughout the oven chamber. This allows food to be baked on several levels at the same time. The temperature should be set 10–20 °C lower than for a static oven.

Steam oven

This type combines hot air with steam. It is suitable for vegetables, fish, and bread; the steam helps prevent drying and gives bread a glossy crust.

Combi oven

This professional appliance uses steam, hot air, or a combination of the two. It is standard equipment in restaurants and pastry kitchens and allows precise control of temperature and humidity.

Pizza oven

Pizza ovens reach temperatures of 400–500 °C. A traditional wood-fired pizza oven (forno a legna) gives pizza its characteristic charred blisters. Pizza stones used in a conventional oven are a domestic alternative.

Features of modern ovens

  • Grill – an upper heating element for a crisp surface
  • Defrosting – a fan operating without heat
  • Self-cleaning (pyrolysis) – the oven heats to 500 °C and burns off residue
  • Temperature probe – measures the internal temperature of meat
  • Programs – preset modes for bread, cakes, and meat

Materials

The oven chamber is usually made of enamelled steel or stainless steel. Its base may have a catalytic coating for easier maintenance. Glass doors usually have two to four layers for thermal insulation.
