Powdered sugar absorbs moisture and forms lumps during prolonged storage. It can sometimes become literally as hard as a rock. There are several ways to remedy this. Place the sugar in a cloth bag and crush it again with a rolling pin or mallet. Alternatively, put the lumps in a mortar and break them up. In either case, sift the sugar afterward so that it becomes light and fluffy. Some recipes call for brown sugar because it has a distinctive, caramel-like flavor and also gives dough a better color. Unrefined brown sugar is usually sold in larger crystals. Grind it finely in a coffee grinder.
