Origin

The blend comes from northern India, particularly the Punjab region. The name “tandoori” refers to the tandoor, a cylindrical clay oven heated with charcoal in which food is cooked at temperatures above 400 °C.

Ingredients

Common ingredients include:

  • ground coriander
  • cumin
  • garlic powder
  • ground ginger
  • ground paprika for colour
  • turmeric
  • cinnamon
  • cardamom
  • cayenne pepper
  • cloves

The red colour is sometimes intensified with food colouring, while blends without added colouring may use enough paprika to produce a red hue.

Uses
