Raisins are the dried fruit, botanically berries, of grapevines. They can be eaten as they are but are used mainly in baking, in doughs for foods such as bundt cake, mazanec, and vánočka, or in fillings, especially quark fillings for small sweet pastries such as kolaches and turnovers. They are also used in cooking, for example in certain sauces, Czech-style carp in black sauce, and chutney. Raisins are very sweet because their sugars are highly concentrated. During prolonged storage, the sugar inside them crystallises; the crystals can be dissolved by briefly soaking the raisins in a liquid such as alcohol, fruit juice, milk, or hot water.

This type of dried grape, one of the most popular dried fruits, is produced mainly in California and the Middle East. Raisins are included in muesli alongside nuts and are used in many kinds of baked goods.

Folk etymology

The Czech word rozinka comes from the German Rosine, which in turn came from the French raisin, meaning a dry grape. Its origin is the Latin racēmus, meaning a berry or bunch of grapes. The alternative Czech form hrozinky arose long ago through folk-etymological association with the word hrozen, meaning grape. Under current Czech spelling rules, both forms are correct.

Processing

Sulphur dioxide is used to extend the shelf life of raisins. It can affect their quality and pose a risk to people who are sensitive or allergic to it.

Effects on animals

Raisins are toxic to dogs, and similar effects are suspected in cats. In dogs, they can cause acute kidney failure. The substance responsible for these effects has not yet been identified.
