Sodium chloride (NaCl), commonly called table salt or simply salt, is a chemical compound found naturally as the mineral halite, also known as rock salt. It is essential to the vital functions of most organisms.

Rock salt is refined in a process similar to sea salt production: brine is purified and allowed to crystallize to the desired grain size, producing cooking and table salt.

Iodized salt

The table salt commonly sold in food shops is often iodized for public-health reasons. A small quantity of iodine is added as potassium iodide or iodate to help prevent iodine deficiency and related disorders, especially thyroid dysfunction. Excessive salt consumption is harmful, however. A commonly cited daily limit is about 5 g of salt, corresponding to approximately 2 g of sodium.

Types of salt

Sea salt

Sea salt is produced by evaporating concentrated seawater in shallow ponds using solar heat. The brine is filtered and warmed until clean salt crystals form.

Table salt

Table salt is refined rock salt used for seasoning and curing meat.

Flavored salt

Garlic salt, celery salt, herb salt and spice blends are common flavored seasonings.

De-icing salt

Coarse crystalline de-icing salt is not suitable for consumption.

Specialty salt

One specialty deposit in the Gulf of Mexico produces regular, flat salt flakes that are particularly suitable for sprinkling on pretzels.
