Coriander (Coriandrum sativum), here referring to its fresh leaves, is an ancient herb in the carrot family that grows wild in the Mediterranean region and the Caucasus. In Latin America and China, it is often sold under names such as cilantro or Chinese parsley. It has a sharp flavor and an orange-like aroma. The fresh leaves are widely used in Indian, Asian, Mexican, South American, and Middle Eastern cuisines and are added to curries. Coriander roots are also used in Thai curries.
Fresh coriander leaves are often added to meat substitutes such as soy-based products or products made from wheat protein, as well as to legume dishes.
