Head lettuce is a valuable salad vegetable. It provides carotene, or provitamin A, which is absorbed more effectively when the salad is prepared with fat, either oil or, in the Moravian style, bacon or sour cream. Use an entire head of forced lettuce; for field-grown lettuce, trim off the tough outer leaves because they are too dense, often bitter, and difficult for many people to digest.

Do not quarter the lettuce; separate it into individual leaves, rinse them gently but thoroughly, and allow them to drain. When preparing it with cream or mayonnaise, place the leaves in a kitchen towel and swing it in a circular motion to spin off the water. Never crush the leaves.
