Prunes are dried plums. Like dates, prunes vary in quality. Prune compote is a popular breakfast food. Because they can have a laxative effect, they are eaten directly without further preparation or used in cakes, puddings, sauces, the Arab stew tadjub ahmar, and, after being cooked down, as a filling for fruit dumplings; they are also served with small pancakes. Prunes can be candied or preserved in brandy and vinegar and are sold either with or without their stones. A delicate brandy is also made from prunes.
