A rooster is a male domestic chicken (Gallus gallus domesticus) whose meat is tougher and tastier than that of a young chicken. Rooster meat is prepared by slow braising; the classic coq au vin (rooster in wine) is an iconic dish of French cuisine. In Czech culinary tradition, rooster meat was used in hearty soups and ragouts. An older rooster requires longer cooking.
