Gingerbread spice blend is an aromatic mixture of spices used when baking gingerbread and other Christmas cookies. In Czech cuisine, it has a long tradition associated with Christmas baking.
Ingredients
Common ingredients in gingerbread spice include:
- ground cinnamon
- ground cloves
- star anise
- allspice
- nutmeg
- ground ginger
- cardamom
The proportions vary: cinnamon predominates in some recipes and cloves in others. Many home bakers traditionally mix the blend to their own preference.
Uses
Gingerbread spice is added to:
- gingerbread and gingerbread cookies
- honey cake
- apple strudel
- cakes with apples or plums
- mulled wine and punch
Buying and storage
Ready-made blends from brands such as Vitana, Dr. Oetker, and Kotányi are sold alongside individual spices for mixing at home. The blend should be kept in a tightly sealed container because its volatile oils evaporate quickly. A freshly mixed blend may have a much more intense aroma than one stored for a long time.
